CHOCOLATE & RED WINE...



Wine enthusiasts were always told to refrain from pairing chocolate and their preferred alcoholic beverage.

As is well known, wine possesses a delicate taste and chocolate is quite intense.

Now I have good news for people who like wine and chocolate.

Luckily, in the last decade and a half, both winemakers and chocolate manufacturers invented new technologies to intensify wine flavours, and mellow that of chocolate.

Now several wines of various intensities can be successfully paired with specially designed chocolates. 
All you have to do is to select a wine that is sweeter than the chocolate.


VIN ROUGE ET CHOCOLAT...


Wine and chocolate are two products combine the greedy but not easy. Therefore for a long time it was considered that water and coffee were the best allies of chocolate.

When you think alliance red wine and chocolate we tend to immediately move toward sweet wines. Yet a light red wine with aromas of red fruit marries well with a dark chocolate or chocolate cake accompanied by a ganache or a coulis of red fruits (cherry, raspberry ...). The aromas are then highlighted in wine as in chocolate.

A more structured red wine may be accepted provided it is old enough that its tannins are integrated and patina.

A wine with tight tannins still to be associated with a bitter dark chocolate that will compete with him.




The roasted flavors (cocoa, coffee) from a former red wine blend perfectly with dark chocolate.
